Maysoon al-Nabahin squeezes the last of the cheese from the freshly baked bread, knowing that it is the only thing her family of eight will eat that day.

Umm Muhammed, as she is known, ran away from the school in Bureij where she, her husband and six children, hid after Israeli forces destroyed their home east of Bureij in central Gaza.

The 45-year-old now lives in several tents near the Al-Aqsa Martyrs hospital in Deir el-Balah in the south. She is a young woman, her face is worried, she looks older than her years.

In the center of their makeshift plastic tent is a small fire where Umm Muhammed is baking bread over a wood fire. He is surrounded by several neatly organized bags containing the things his family was able to bring, as well as a pile of blankets, now removed to make room for the day.
